Maddur vade
Ingredients:
Rice flour - 1 Cup
Coarse rava - 1/2 Cup (Upma Rava)
Maida/all purpose flour - 2 Tbsp
Onion - 2 medium
Green chillies - 3
Salt - As required
Red chilly powder - 1 to 1 1/2 tbsp
Curry leaves - few
Water - As required for kneeding
Oil - for frying + 3 tbsp
Method:
1) Dry roast maida until warm.
2) Mix rava, rice flour and warmed up maida. Along with red chilly powder, green chillies, finely chopped onion, shredded curry leaves, salt and mix well.
3) In a pan add 3 tbsp of oil and heat until hot and mix well.
4) Take half of the mixture and keep it aside.
5) Add water little by little and knead well.
6) Make balls and spread thin / thick.
7) Fry them in medium flame until onion turns golden brown.
Yummy Maddur vada is ready to be served with coconut chutney.
Note:
1) Keeping the mixture aside helps, as onion leaves water when mixed with salt.
2) The other reason for mixing half mixture is, if it turns watery then the dry mixture can be used.
3) If you make it thick, you need to finish them on same day. But, if its thin then it can be stored for few days in an air tight container.
