Homemade veggie Puff using Pastry sheets


Ingredients:

For stuffing:

Carrot, beans, peas, sweet corn - 1 Cup
Onion - 1 medium
Potatoes - 3 peeled & cut in cubes (Optional)
Ginger garlic paste - 1/2 Tsp
Cumin seeds - 1 Tsp
Chilli powder - 1/4 Tsp
Turmeric powder - 1/4 Tsp
Garam Masala - 1/4 Tsp

Coriander / cilantro - 1/4 cup
Salt - As required

Method:


1) In a pan add oil, add cumin seeds and saute for 5 sec.
2) Add onion, ginger garlic paste. Saute until golden brown.
3) Now add vegetables one by one and saute until done.
4) Add turmeric, chili powder, salt, and garam masala. Mix well until the masala is coated well.
5) Garnish with Coriander leaves.

Puff:


1) Preheat oven to 400 F.
2) Thaw the puff pastry sheets as per package instructions.
3) Cut the sheets into equal sizes.
4) Scoop vegetable mixture and place in the middle section over the pastry sheet.
5) Spread water on edges.  Fold the sheet over the filling and make a triangle or of the desired shape. 
6) Smear some melted butter on top and place it on a baking sheet.
7) Bake for 20 - 25 mins – till golden brown.

Serve hot with chutneys.


Note:

1) Puff Pastry sheets can be found in the frozen food section.

2) If making them beforehand – reheat them in the oven at 250 F for about 5 mins. Do not microwave –it may get soggy and lose the delicious crunch.
3) Vegetable of your choice can be added. Paneer can also be added.
4) Use a fork to press firm if necessary. To avoid opening when baking and also for serving.
5) Along with smearing of Melted butter, Puffs can be poked with a fork to get some air in during the baking process.

Coconut Chutney Restaurant Style


Ingredients:

Coconut fresh, grated
green chili -1
Milk to grind
Salt - As required
Oil - 1/2 Tsp
Mustard seeds - 1/2 Tsp
Urad dal -1/2 Tsp
Curry leaves - A few

Method:

1) Grind fresh coconut, green chili, salt, little milk.
2) In a pan, add oil, once it's hot
3) Add mustard, urad dal, curry leaves and add this seasoning to the ground chutney.



Tawa pulav


Ingredients:

Butter - 2 Tsp 
Cumin / jeera - 1 tsp 
Onion - 1/2, sliced
Ginger garlic paste - 1 tsp 
Carrot - 1, chopped
Capsicum - 1/2, chopped
Peas - 2 tbsp 
Beans - 5, chopped
Salt - As required
Tomato - 2
Pav bhaji masala - 2¼ tsp 
Kashmiri red chilli powder - ¼ tsp
Potato - 1, boiled & cubed
Coriander / cilantro - 2 tbsp, finely chopped
Lemon juice - 1 tbsp 

For Rice:

Basmati rice - 1 cup
Turmeric - ¼ tsp 
Salt - As required
Oil - 1 Tsp 
Water - to soak & boil

Method:

1) In a pan, heat 2 tsp butter and saute 1 tsp cumin until it turns aromatic.
2) Now add ½ onion and 1 tsp ginger garlic paste. saute well.
3) Make sure to keep flame in medium. Now add 1 carrot, 2 tbsp capsicum, 2 tbsp peas, 5 beans, and some salt.
4) Fry for 3 minutes or until vegetables is cooked slightly.
5) Now add 2 tomatoes and saute until the tomato turn soft and mushy.
6) Now add 2 tsp pav bhaji masala and ¼ tsp chili powder. Saute until the oil is released from the masala paste.
7) Add boiled and cubed potato and mix well. 
8) Add in cooked rice. Mix gently without breaking the rice.
9) Add in 2 tbsp coriander and 1 tbsp lemon juice. mix well.

Tawa Pulav is ready to be served.
