Keylime Pie


Ingredients:

For the filling:

Sweetened condensed milk - 1 can (14oz/398g) 
Cream cheese - 1 cup (8oz/225g) 
lime juice, freshly squeezed - 1/4 cup (4floz/115ml) 
zest of 3 limes
Heavy cream - 1/3 cup (2 1/2floz/71ml) 
Vanilla extract - 1 1/2 teaspoons 
Whipped cream for decorating

Method:


1) First juice 1/4 cup of fresh limes.
2) In a large bowl whip the cream cheese, condensed milk, heavy cream, lime juice, lime zest, and vanilla. Whip for roughly 4-5 minutes until it firms up. Don't worry if your mix is not really firm as it will set up in the fridge overnight.
3) Fill the mixture in the Pie crust. Place it in the fridge and allow to set for a minimum of 5 hours but preferably overnight. 
4) Once set, decorate it with whipped cream and Lime Zest, slices of lime.

Keylime Pie is ready to be served.


Note:

1) I have used ready made pie crust from Atlantic Superstore
2) I have used cream cheese which is sold in cube form (not the spreadable tub cheese)
3) To Make graham cracker crust: 2 cups (6oz/170g) graham cracker crumbs (or any plain biscuit)) and 3/4 cup (6oz/170g) butter, melted. 
Prepare the graham cracker crust by mixing the melted butter with the graham crumbs until you've reached the texture of wet sand.
Transfer the crust mixture into Pie Pan and press down using your fingertips. Use a small bowl or cup to push the crumbs up the side of the tin. This will form an even crust. Once the graham mixture has been pressed. Place in the fridge to set for around 30 minutes.
4) If you want to be able to remove your pie from the dish to serve then line your pie tin with 2 layers of cling wrap. This will ensure you can easily remove the pie crust from the tin. 
5) As there is no setting agent, it needs a long time in the fridge.
6) This pie can be kept covered and stored in the fridge for up to 4 days.
7) Add more lime juice if required.
8) Blend in a blender for 4-5 mins or until you reach the required consistency.




Dragon Fruit Milkshake


Ingredients:

Dragon Fruit - 1
Strawberry - 1
Blueberry - Around 6
Sugar - 2  Tbsp
Milk - 1/4 cup


Method:

1) Scoop out the pulp from the dragon fruit
2) Blend it with the required amount of sugar, berries, and milk.

Dragon fruit Milkshake is ready to be served.

Dragon Fruit Juice


Ingredients:

Dragon Fruit - 1
Sugar - 2  Tbsp


Method:

1) Scoop out the pulp from the dragon fruit
2) Blend it with the required amount of sugar.

Dragon fruit juice is ready to be served.

Paneer Puff using Pastry sheets


Ingredients:

For stuffing:

Carrot, beans, peas, sweet corn - 1 Cup
Paneer - 1 cup (Pieces)
Onion - 1 medium
Potatoes - 3 peeled & cut in cubes (Optional)
Ginger garlic paste - 1/2 Tsp
Cumin seeds - 1 Tsp
Chilli powder - 1/4 Tsp
Turmeric powder - 1/4 Tsp
Garam Masala - 1/4 Tsp

Coriander / cilantro - 1/4 cup
Salt - As required

Method:


1) In a pan add oil, add cumin seeds and saute for 5 sec.
2) Add onion, ginger garlic paste. Saute until golden brown.
3) Now add vegetables one by one and saute until done. Now add Chopped Paneer pieces.
4) Add turmeric, chili powder, salt, and garam masala. Mix well until the masala is coated well.
5) Garnish with Coriander leaves.

Puff:


1) Preheat oven to 400 F.
2) Thaw the puff pastry sheets as per package instructions.
3) Cut the sheets into equal sizes.
4) Scoop vegetable mixture and place in the middle section over the pastry sheet.
5) Spread water on edges.  Fold the sheet over the filling and make a triangle or of the desired shape. 
6) Smear some melted butter on top and place it on a baking sheet.
7) Bake for 20 - 25 mins – till golden brown.

Serve hot with chutneys.


Note:

1) Puff Pastry sheets can be found in the frozen food section.

2) If making them beforehand – reheat them in the oven at 250 F for about 5 mins. Do not microwave –it may get soggy and lose the delicious crunch.
3) Vegetable of your choice can be added. Paneer can also be added.
4) Use a fork to press firm if necessary. To avoid opening when baking and also for serving.
5) Along with smearing of Melted butter, Puffs can be poked with a fork to get some air in during the baking process.
