Ingredients:
Ridge gourd Peel - Dried or fresh
Green chilly - 4
Roasted chana Dal - 1/4 cup
Tamarind pulp - 1/2 cup
Coconut - 1.4 cup (grated)
Oil - 2 tbsp
Salt - As required
Sugar - 1/4 tbsp
Mustard - 1/4 tbsp
Hing/ Asafoetida - 1/4 tbsp
Curry leaves- Few
Method:
1) Wash and remove skin of Ridge gourd.
2) Dry then until crisp.
3) Add Dried peel, tamarind, salt, sugar, roasted chana dal, green chillies, coconut in a mixer and make a fine paste.
4) For Tempering, heat oil and add mustard seeds. When they splutter, add hing and curry leaves.
7) Add this to the chutney.
Ridge gourd chutney is ready to be served with hot steamed rice/chapati/sandwich/dosa.
