Tomato pulav
Ingredients:
Ghee / clarified butter - 1 tbsp
Bay leaf - 1
Cloves - 5
Star anise - 1
Cinnamon stick - 1 inch
Whole cashews halved - 10
Onion thinly sliced - 1 medium
Ginger garlic paste - 1 tbsp
Tomato - 2 medium
Green chili - 1
Carrot - 1
Peas - 1/4 cup
Potato - 1 small
Beans - 1/4 cup chopped
Red chili powder - 1/2 tbsp
Turmeric - 1/4 tbsp
Salt - As required
Coriander leaves finely chopped - 2 tbsp
Pudina/mint finely chopped - 2 tbsp
Basmati rice - 1 cup (Soaked 20 minutes)
Water - 1 1/2 cup
Method:
1) In a pan, heat ghee and saute spices, cashews add onions and fry.
2) Now add ginger garlic paste and chili. ?Fry well until its completely done.
3) Now add finely chopped tomatoes and fry for 2 mins.
4) Add mixed vegetables of your choice and fry for another 2 mins.
5) Now add red chili powder, turmeric, salt, coriander leaves and mint. Mix well and fry for 2 mins.
6) Wash and soak basmati rice for 20 minutes.
7) Add the rice to the masala. Now add water and mix well.
8) Cook until rice is well cooked.
Tomato Pulav is ready to be served with Raita.
