Cheese pudi dosa


Ingredients:

Dosa batter - 4 cups
Mozarella cheese - 1/4 cup (Grated)
Chutney pudi - 1/4 cup

Method:

1) Spread the dosa batter on a pan.
2) Sprinkle some pudi on top of it immediately.
3) When dosa's are almost done, sprinkle grated cheese.

Yummy Cheese pudi dosa's are ready to be served.



Potato pancake


Ingredients:

Potato - 2 medium
Salt - as required
Pepper powder - 1/4 tbsp
Butter - as required

Method:

1) Wash , peel potatoes and grate them.
2) Squeeze and remove the water from them.
3) in a pan add some butter and let it melt.
4) Spread the grated potato in the desired shape.
5) Add some more butter on top of pancake. 
6) When the pancake is partially roasted, sprinkle some salt and pepper powder on it.
7) Flip to other side and follow step 5 and 6.

Tasty potato pancakes are ready to be served as it is or with maple syrup.

Note:

1) If serving with maple syrup, then avoid salt and pepper powder.
2) Try to squeeze as much as water content before spreading on pan.


Kiwi icecream


Ingredients:

Kiwi - 2 medium
Sugar - 3/4 cup
Milk cream - 1/2 cup


Method:

1) Mix all the ingredients and blend it together.
2) Freeze this mixture for more than 4 hours.

Note:

1) Chop Kiwi into small pieces and refrigerate for 2 hours. Adding this gives great consistency.
2) You can also add finely chopped kiwi pieces to the mixture before freezing.
3) Dried kiwi bits can also be added to the icecream mixture.
4)  Milk can also be used in place of milk cream.

Mango icecream


Ingredients:

Mango - 1 medium
Sugar - 3/4 cup
Milk cream - 1/2 cup


Method:

1) Mix all the ingredients and blend it together.
2) Freeze this mixture for more than 4 hours.

Scoop the mango ice cream and its ready to be served.

Note:

1) Chop Mango into small pieces and refrigerate for 2 hours. Adding this gives great consistency.
2) Add finely chopped mango pieces to the icecream mixture before freezing.
3) Milk can also be used in place of milk cream.

Paddu / Paniyaram


Ingredients:

Dosa batter - 4 cups
Salt - As required
Green chillies - 2
Onion - 1 medium (finely chopped)
Oil - 1 cup

Method:

1) Heat the paddu pan. 
2) Apply oil with brush on a pan.
3) Pour dosa batter in the holes of the pan.
4) Close the lid on the pan for around 5 mins.
5) Take the lid, now turn the paddu in pan upside down and roast for another 5 mins or until golden brown.

Yummy paddu is ready to be served with chutney.

Note:

1) Keep the flame in medium when frying paddu.
2) Grated carrot can also be added to the batter.

Idly Upma


Ingredients:

Idly - 10
Onion - 1 cup (finely chopped)
Green chillies - 4
Mustard - 1/4 tbsp
Jeera - 1/4 tbsp
Urad dal - 1/4 tbsp
Channa dal  - 1/4 tbsp
Hing - 1/4 tbsp
Groundnuts / Peanuts - 1/4 tbsp
Turmeric - 1/4 tbsp
Coriander leaves - 1/4 tbsp (Finely chopped)
Oil - 2 tbsp
Salt - as required
Curry leaves - few
Water - 1/4 cup

Method:

1) Powder idly's into rava consistency.
2) In a pan, add oil followed by mustard, jeera, channa dal, urad dal, hing, curry leaves, groundnut.
3) Once he groundnuts are roasted well, add turmeric and leave for 1 min.
4) Add the powdered / Rava from idly and mix well.
5) Sprinkle 1/4 cup of water. Add salt. Mix well.
6) Turn the flame to low and let it cook for 2mins.
7) Garnish with coriander leaves.

Tasty Idly upma is ready to be served.

Lemon mint Juice


Ingredients:

Lemon juice - 2 tbsp
Mint - 2 tbsp (finely chopped)
Salt - A Pinch
Sugar - 2 tbsp
Cardamom powder - 1/4 tbsp
Water - 1 glass

Method:

1) Mix all the ingredients. Adjust sugar and water as per taste.

Serve chill.

Note:

1) Crushed Ice can also be added.

Mixed Vegetable Rice




Ingredients:

ThondeKayi /  ivy gourd - 1 cup chopped
Green bell Pepper  - 1 cup Chopped
Eggplant - 1 cup Chopped
Cumin / Jeera - 1 tbsp
Mustard - 1 tbsp
Chana dal - 1 tbsp
Urad dal - 1 tbsp
Hing  / Asafoetida - 1/4 tbsp
Groundnuts / Peanuts - 1/4 cup
Vangi bath powder - 2 tbsp
Salt - as required
Red chilly powder - 1/4 tbsp (Optional)
Lemon juice - 2 tbsp
Turmeric - 1/4 tbsp
Coriander leaves - 1/2 cup
Rice - 1 cup
Water - 2 cups
Ghee / Oil - 2 tbsp

Method:

1) Wash rice and make rice with sufficient water. Keep this aside.
2) In a pan, add oil, mustard, jeera, chana dal, urad dal, hing until it turns golden brown. Add groundnuts and fry until golden brown or chrisp.
3) Add chopped vegetables and cook until completely done.
4) Now add turmeric, red chilly powder, vangi bath powder, salt and 1 tbsp lemon juice. Turn off the heat.
8) Once the rice is cooked, add lemon juice, masala and mix well.
9) Garnish with coriander leaves.

Yummy Mixed Vegetable Rice is ready to be served.


Note: 


1) Any vegetables can be added.

2) Tomato / tomato paste can also be added for extra flavour.
3) Ginger, garlic and green chillies can also be added.
4) Shredded coconut can also be added.

Maddur vade


Ingredients:

Rice flour - 1 Cup
Coarse rava - 1/2 Cup (Upma Rava)
Maida/all purpose flour - 2 Tbsp
Onion - 2 medium
Green chillies - 3
Salt - As required
Red chilly powder - 1 to 1 1/2 tbsp
Curry leaves - few
Water - As required for kneeding
Oil - for frying + 3 tbsp


Method:

1) Dry roast maida until warm.
2) Mix rava, rice flour and warmed up maida. Along with red chilly powder, green chillies, finely chopped onion, shredded curry leaves, salt and mix well.
3) In a pan add 3 tbsp of oil and heat until hot and mix well.
4) Take half of the mixture and keep it aside.
5) Add water little by little and knead well.
6) Make balls and spread thin / thick.
7) Fry them in medium flame until onion turns golden brown.

Yummy Maddur vada is ready to be served with coconut chutney.

Note:

1) Keeping the mixture aside helps, as onion leaves water when mixed with salt.
2) The other reason for mixing half mixture is, if it turns watery then the dry mixture can be used.
3) If you make it thick, you need to finish them on same day. But, if its thin then it can be stored for few days in an air tight container.

Tomato Chutney - Version 1


Ingredients:

Tomato - 2 medium
Salt - As required
Sugar - 1/2 tbsp
Tamarind - Marble sized
Green chillies - 2
Coriander - 1/4 cup chopped
Mint - 6 leaves

Method:

1) Chop tomatoes roughly.
2) In a pan, add all the ingredients and fry until tomatoes turn soft.
3) Once this mixture cools down, blend them into fine paste.

Tomato chutney is ready to be served

Note:

1) The chutney can be seasoned as well. I like it with out seasoning.
